Perfect Match: Green Tea + Red Bean Mousse Cake

Green tea and red bean is truly a classic ingredient pair for desserts. The slight bitterness of green tea complements really well with the sweetness and texture of red bean. 

Ingredients for Green Tea mousse:

  • 20g Green tea powder
  • 2 egg yolks
  • 60g sugar
  • 160ml milk
  • 10g gelatin
  • 180g heavy whipping cream


Method:

  1. Bloom the gelatine sheet in cold water.
  2. combine sugar and egg yolks and beat the mixture until it's pale and fluffy
  3. heat the milk to almost boil and quickly pour into the egg yolks mixture while still whipping.
  4. place the bowl over a double boiler and continue to whip for about 10 minute.
  5. melt the soften gelatine sheet using the double boiler, then mix it into the egg yolk mixture.
  6. Mix  in the green tea powder and stir to combine.
  7. Whip the heavy whipping cream to soft peak form.
  8. Pour the whipped cream into the the yolk mixture and fold to combine. 
  9. Pour green tea mousse into the mold and refrigerate for 4 hours or more until it's firm.
  10. Remove from the mold and decorate. 



Ingredients for Red Bean mousse:
  • 180g Red Bean
  • 80g sugar 
  • 84ml Coconut milk
  • 10g gelatin
  • 160g heavy whipping cream

Method: 

  1. Soak the red bean in cold water overnight, put into the pressure cooker and cook until it's tender.
  2. Bloom the gelatin sheet in cold water.
  3. combine sugar, coconut milk, and the soften gelatin sheet over a  double boiler and stir slowly until the gelatine is melted, and all ingredient are combined. 
  4. Whip the heavy whipping cream to soft peak form.
  5. Mix in the red bean to the whipped cream, fold to combine.
  6. Fold in the gelatin milk mixture and fold to combine. 
  7. Pour mousse into the mold and refrigerate for 4 hours or more until it's firm.
  8. Remove from the mold and decorate.
